White Fish Soup with Saffron

Bring on the convenience of a one-pot meal that just simmers on the stove-top, ready to be enjoyed to it’s full potential.

White Fish Soup with Saffron is a beautifully light and flavourful soup that’s injected with dose of precious saffron, a spice so colourful and aromatic that it changes the profile of a meal and acts as a versatile medicine that has been used since ancient times. This recipe is from my latest book Heal Your Gut.

The foundation of this dish is fish stock, a nourishing and gut friendly building block rich in essential minerals: iodine, calcium, magnesium, phosphorous, silicon and sulphur that will provide your body with an variety of nutrients and omega-3 fatty acids to boost the gut and the brain.

Fish stock also contains gelatin, to help seal the digestive tract and improve the digestion of food through its hydrophilic (liquid attracting) properties.

If you prefer, you can use vegetable stock in this recipe but don’t be afraid of fish stock, really it’s affordable and ever so simple to make. There’s no roasting or long simmer times, all you need is half an hour in the kitchen to get a good result. (more…)

G'Day Mate. I've got a fair dinkum Aussie recipe for you today.

Struth it's bonza. (Translation= Wow + tastes really delicious). 

If you're looking for a hip and healthy dessert that will pep you up AND cool you down, then 'av-a-go-yer-mug' at this.

Introducing my luscious Kakadu Plum and Blueberry Ice Cream.

This recipe was inspired after I was enlisted by Natural Instinct to come up with a bunch of lunchtime recipes using ingredients featured in their skincare range. You can read a review of the range here.

One of the challenges was to use an interesting native ingredient called Kakadu plum which was used traditionally by Australian Aboriginals as an antiseptic and soothing balm for aching limbs.

With more than twenty times the vitamin C content of oranges I was eager to try out this Supercharged Food and create a gourmet dessert that was not only simple to make but also healthy and delicious.

Bearing all of this in mind, when I created my Heal Your Gut program I sought to offer a wide variety of specialist information and advice to be available at your fingertips. A wealth of knowledge that has been learned, handed down, tried and tested and scientifically proven from a team of professional medical practitioners, gastroenterologists, naturopaths, nutritionists and integrative doctors.

Each one of my carefully picked experts has their own methods and experiences, and come from a varied background, a mixture of Western and Eastern philosophies and practices so you can learn as much as you can, and choose the healing pathway that is right for you. Being bi-cultural myself, half English and half Indian it was important for me to offer both sides of the medicinal and cultural coin.

I’m happy to report that together, my team of experts creates an amazing wealth of knowledge that you can draw upon and take on board, based upon your own personal circumstances and requirements.

Dr Vincent M. Pedre III (M.D)
is a resident medical doctor from the United States. He’s a qualified internist (specialist in intestinal diseases). His philosophy and practices are a blend of both Western and Eastern medical traditions. He is a Clinical Instructor in Medicine at the Mount Sinai School of Medicine, as well as certified in yoga and Medical Acupuncture. Having suffered from IBS for years he understands how life debilitating this illness can be. Believing that the gut is the ‘seat of all health’ he aims to heal from the inside out.
 He has just released a book called Happy Gut.

Dr Libby Weaver (PHD) is our resident biochemist and one of Australasia’s leading nutritional biochemists. Dr Libby spent 14 years at University and graduated with a bachelor of Health Science majoring in Nutrition and Dietetics with honors and a PhD in Biochemistry. Combining holistic approaches with her scientific education and seventeen years of clinical experience she addresses the link between how stress impacts the gut.

Dr Jillian Sarno Teta
 is a naturopathic doctor who has studied biology, energy and environmental analysis and naturopathic medicine. This incredible woman is the creator of the Fix Your Digestion gut restoration program, using all her different studies to give an easy guide that helps people improve their gut health. (more…)

“I am so grateful for my new lease on life after completing Phase 1 from your Heal Your Gut program. After a kidney infection 4 or 5 years ago, I took antibiotics for a year, then my muscles started aching and I was diagnosed with an autoimmune disease, tested for MS, etc. So then I was on Prednisolone for 2 1⁄2 years. My skin was bumpy and dry and I had fine lines on my face, I had migraines for the first time in my life, my hair was thinning, I definitely had a foggy brain, leg muscles ached, and I was always tired. I knew it was inflammation, but did not know how to fix it, apart from taking more anti inflammatory drugs.

My sister in law heard you on 3AW and called me, saying that my symptoms were the same as yours. My first week was pretty rough, with headaches and flu like symptoms for a week. Chamomile and Lavender Tea – The Dynamic Calming Duo

Holmes and Watson, Batman and Robin, Bogey and Bacall, just a few dynamic duos who although can exist independently, are so much better when intertwined.

Aristotle familiarised the concept of synergy when he coined the term “The whole is greater than the sum of its parts” and my next couple is just that, a food-pairing match made in heaven.

Natural Instinct Skincare

For me, the Natural Instinct skincare range ticks all the right boxes.

That’s because it's created entirely from certified organic extracts, pure essential oils and lovely plant derived, truly natural ingredients.

Healthy Fish Curry

I’m incomplete without a tasty curry, especially in the warmer seasons when beautiful fresh seafood and colourful vegetables of all kinds are in abundance.

If you regularly have your pantry stocked with an array of staple spices and a couple of tins of coconut milk, you can use up whatever seasonal proteins and plant based ingredients are available to you to produce a nutritionally supercharged meal.

When shopping, I’m usually on the lookout for whole food ingredients that provide extra nourishment into my meals, and for this recipe I've added in a wholesome dose of Lucky Cashew Meal which is a new ingredient that I recently became aware of. I’ve used it to both thicken the liquid, offer natural sweetness and provide some impressive health benefits.

Cashews are a supercharged food because they’re high in protein, and magnesium; a mineral that many people are deficient in, ad one that’s important for preventing muscle tension, maintaining blood pressure, keeping bones strong, reducing the risk of heart disease and addressing neurological disorders.

Cashew meal is useful to keep on hand as a pantry staple because of its versatility. It's an additive free, real-food plus it’s a gluten free ingredient that can be used to crumb meats, add protein to smoothies, bring flavour and thickness to curries, soups and stews, and as a substitute flour in wheat free cooking and baking.

Healthy Fish Curry

Ingredients:

  • 500 grams of boneless, skinless white fish - cut into bite-size cubes
  • 6 teaspoons curry powder
  • 1/3 cup Lucky Cashew Meal
  • 3/4 teaspoons salt, divided
  • 2 tablespoons coconut oil
  • 1 large onion, chopped
  • 1 tablespoon chopped garlic
  • 1 can coconut milk or coconut water
  • 1 cup reduced-salt fish stock
  • 2 cups cubed sweet potato
  • 1 cup sliced carrots
  • 1/2 cup chopped celery
  • 3/4 cup frozen peas

Method:

Place fish in a medium bowl. Sprinkle with 1 teaspoon curry powder and 1/4 teaspoon salt; toss to coat. Heat 1 tablespoon of oil into a pan oven over medium-high heat. Add fish and cook, stirring once or twice, until mostly browned, 6 to 8 minutes. Transfer to a plate.

Heat the remaining 1 tablespoon oil in the pot and add onion and garlic. Cook, stirring often, until the onion is starting to soften, 2 to 4 minutes. Stir in the remaining 5 teaspoons curry powder and cook, stirring, until fragrant but not browned, 30 seconds to 1 minute.

Add coconut milk / water, stock, sweet potato, carrots, celery and the remaining 1/2 teaspoon salt and bring to a boil over high heat, stirring often.

Reduce heat to medium-low to maintain a gentle simmer and add Lucky Cashew Meal. Cook, stirring occasionally, until the potatoes and carrots are tender, 10 to 12 minutes.

Return the fish to the pot and add peas. Remove from the heat. Serve with brown rice or quinoa.

I am so refreshed by easy going, non-fussy, non-judgemental and all embracive health resources, and Irena's book totally nails this vibe in her creation of Happy Go Paleo.

The Fresh Vegan Kitchen

Charlotte and David Bailey are an English couple who have released their debut cookbook The Fresh Vegan Kitchen here in Australia.

The book has stemmed from their successful business Wholefood Heaven which saw them fall in love with a Citroen H van and transform it into any foodies dream- a mobile food van that only produces the freshest, most nutritious whole foods to people on the go.

Since the inception of their food truck, Charlotte, an oxford graduate, and David, a fully qualified chef, have turned it into their full time business.

So much so, David now offers classes and retreats for budding cooks who want to increase their skills and expertise when trying to cook vegetarian, vegan or create raw dishes at home.
