Hello Vera Smoothie

Serves 2

Ingredients:

  • 250 ml (9 fl oz/1 cup) Almond Milk or Coconut Milk
  • 125 ml (4 fl oz/1/2 cup) pure aloe vera juice
  • 80 g (23F4 oz/1/2 cup) fresh or frozen organic blueberries
  • 1/2 large ripe banana, or 1 small lady-finger banana
  • 2 teaspoons extra virgin coconut oil
  • 1 handful of basil leaves, plus extra to garnish
  • liquid stevia, to taste (optional)
  • 1 teaspoon LYG powder

Method:

Place all the ingredients in a high-speed blender and whiz until smooth.

Pour into glasses or jars, garnish with extra basil and serve.

In our fast-paced world, everything is happening in a rush. We grab the first decent-looking thing from the fridge in the morning and gulp it down, we speed through our lunches while we scroll through instagram and we mindlessly watch whatever’s on TV during dinner.

For many of us, we’ve taken the pleasure out of meal times. Sadly, meals are no longer a time of talking and gathering together but rather, something that takes up time in between tasks. Meals have been replaced with mindless chomping and finger scrolling.

I must admit that sometimes, I like to let my inner-Nigella free and venture into the kitchen for some secret midnight snacking!

This is an activity that is totally okay by me... just not something that should happen every single night -  especially when it often involves sugar-laden treats that can often leave your tummy feeling uncomfortable, your blood sugar levels sky high and your brain over wired.

So, what to do? Go for the celery stick instead? This moment is one that many people are often plagued with and a time when you might start to question all of the food decisions you’ve ever made up until this point. 

I know I’m not the only one who partakes in such activities and so, I thought I'd make myself useful and create something that is okay for an anytime treat. This is a recipe that you can keep in your freezer when hunger cravings strike. It's my favourite gut loving and satiating Turmeric Tummy Bark.   These fine chunks of goodness will satisfy your sweet cravings, keep you feeling happy and leave your tummy feeling fine. 

This delicious bark is gluten-free, dairy-free, vegan, refined-sugar free, nutritious and super scrumptious. I've made sure that it's packed with all the good stuff; turmeric, slivered almonds and my insta-famous Love Your Gut powder. Just one bite will leave you feeling better, rather than worse after you’ve eaten it, and that to me is a treat worth waiting for.

If you weren't aware by now, I'm happy to admit that I love love LOVE turmeric! 
 
There's a big reason this powerful spice has taken over the kitchens and menus of 2016 and will continue to do so in 2017.
 
The compound within turmeric, known as curcumin, is the main active ingredient and gives turmeric it's famous golden colour.  It's responsible for a host of anti-inflammatory properties and the ability to offer your immune system a boost. 1/2 cup tahini
1/4 cup coconut oil, melted
2 tbsp LYG Powder
2 tsp turmeric 
1 tsp ginger 
 
Method:
Stir all ingredients in a bowl, poor into a small lined baking dish, set in the fridge for an hour and cut into slices!

Gut Healing Pancakes

Hello pancake fans.

Need some motivation to get out of bed in the morning?  Today I'm sharing my favourite pancake recipe with a gut healthy twist.  It's my favourite weekend go-to breakfast.

Sometimes the flipside of pancakes is their unhealthy reputation, think refined white flour, white sugar, additives and homogenised milk.  I'm hoping you'll prefer my delicious fluffy, gut healing pancakes that use a secret weapon; my Love Your Gut dinosaur powder or diatomaceous earth, a raw whole-food which helps to cleanse the gut, allowing you to absorb your nutrients more effectively.  

Diatomaceous earth is also know as fossil shell flour, a stone-age natural food that has many healing qualities and is rich in silica so great for hair, skin and nails. You can watch a video about it here.

The pancake batter is very adaptable and stays fresh in the fridge for up to four days, you can freeze it too if needed for later usage.

When it comes to additions, the rice malt syrup can be replaced with stevia if you prefer and fruit can be swapped out with whatever you have in your nut stash.  Sprinkled on coconut flakes also add a nice crunch! 

I often serve mine with a dollop of chai spiced coconut whipped cream (recipe below).  Now here's a new reason to smile and jump out of bed in the morning.  Why not whip up a batch and let me know what you think in the comments section below?

Gut Healing Pancakes

Serves 3

  • 100g almond meal
  • 1 tbs Love Your Gut Powder
  • 2 tablespoons rice malt syrup, plus extra to serve
  • ½ teaspoon Celtic or Himalayan sea salt
  • 4 eggs, lightly beaten
  • grated zest of 1 lemon
  • 1 teaspoon alcohol-free vanilla extract
  • 125 ml (4 fl oz/½ cup) coconut, almond or rice milk
  • 1 tablespoon coconut oil or butter
  • 125 g (4½ oz/1 cup) mixed berries to serve (optional)


Place the almond meal, LYG powder, rice malt syrup, salt, eggs, lemon zest and vanilla in a medium bowl and whisk to combine. Gradually pour in the milk, whisking until smooth. Heat oil or butter in a frying pan until melted or brush the pan evenly to coat the surface.
Scoop or pour the batter into the pan to form pancakes to your liking. 
Cook the pancakes for about 1-2 mins until small bubbles appear on the surface and the undersides are nicely browned.
Flip the pancakes over and cook until the second sides are nicely browned, another minute or so. 
Transfer to warmed plates until all batter is used and then tumble on your favourite toppings.

Chai spiced coconut cream

  • 1 can of coconut milk
  • ½ tsp ground cardamom
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • stevia to taste

Place the can of coconut milk in the fridge overnight (or even up to 24 hours).  When you open the can, scoop out the thick layer of cream on top. Take only the cream and leave the coconut water (use in your next smoothie!)  Place the coconut cream in your blender or hand mixer and whip on high for 1 minute.  Add in cardamom, cinnamon, nutmeg, vanilla extract and stevia and whip for another couple of minutes or until you get a whipped cream consistency.

Fighting the family worm disaster with Diatomaceous Earth

Worms. I’m sorry, this isn’t the most enjoyable subject material, but if you’re a mum or dad with  school aged children, you may already be familiar with this unsavoury situation. If you haven’t experienced it in your family yet, it’s time to get informed so that when the problem rears its ugly head you know exactly how to tackle it. I also have some great news on a natural way you can rid your body of these pesky critters before resorting to drugs.

Pinworms, also known as threadworms are the a parasitic worm and the most common worm infection in Australia, the UK and the USA.  Kids are more likely to pick up an infection than an adult, probably because of children’s tendency to put their fingers in their mouths, and you may notice worms emerging in your family when your littlies begin day care and school. An annoying truth of the childhood worms experience is that once a child is infected, other members of their household are also likely to get pinworms unless strict hygiene practices are observed.

Threadworms are spread by children scratching their bottom and carrying the worm eggs back to their mouth with their hands. They can also be spread indirectly through food and dust. The eggs can survive up to two weeks outside the body, and once these eggs are swallowed, they hatch in the small intestine and travel down.

Despite the ugly reputation, a pinworm infection is relatively harmless and can be easily treated.

What to look out for

Signs of a pinworm in children include

  • Tiredness, or generally feeling “out of sorts”
  • Disturbed sleep
  • Lowered appetite
  • Itchy bottom, especially at night
  • Small white worms appearing around the anus
  • White worms in stools

Home care practices

When you notice an infection of worms, you can help reduce the spread to family members through

  • Discouraging scratching the bottom
  • Keeping everyone’s fingernails trimmed and clean. A nail scrubber is a good option.
  • Washing hands with warm soapy water after the toilet
  • Laundering bedding in hot water
  • Vacuuming the house often to remove eggs

Ridding the body of worms naturally

Diatomaceous Earth is a brilliant first step alternative to over the counter drugs and is something that I personally consume regularly to rid my body of parasites, especially during travel overseas or if I suspect an infection. It’s been very effective in gently cleansing my digestive system. And a clean digestive system is the starting point for overall body and mind health. It’s also a beautiful all-rounder for family gut health and cleansing and because it is a food not a supplement, it's safe for adults and children.

Diatomaceous earth is one of the best natural, food based anti-parasitic medications. It works by attracting bacteria, fungi, viruses, pesticides, drug residues etc to absorb them. The hollow cylinder structure allows pathogenic bacteria to become trapped and passed through the body. Larger parasites found in the stomach are actually cut up and killed by the Diatomaceous Earth particles!

On my expedition into gut healing, I’ve been so blessed to discover that eating in a way to maintain or heal gut troubles doesn’t have to be a deprivation. In fact I have enjoyed it. I’ve discovered so many wonderful healing ingredients along the way that when paired together in mighty gut-healing strength, also work to bring gorgeous flavour and enjoyment. That has always been my mission- to target gut troubles effectively whilst also providing a joy-factor.

When it comes to gut health, one of the ingredients that gets me giddy is the humble zucchini. They’re really cheap, but absorb so much flavour, are incredibly versatile and are super-dooper good for your gut. First of all they're incredibly low in starch, so it’s much simpler for your gut to digest than some other higher carbohydrate veggies.

They’re also bursting with potassium and Vitamin C, two nutrients that help to reduce inflammation of the gut lining if you suffer from leaky gut or gut pain and intolerance symptoms. They’re also going to give you a good dose of fibre to keep things moving!  

Zucchini also promotes regularity because of the balance of soluble and insoluble fibre it contains- which also acts as a lovely pre-biotic to feed all the good guys living in your gut that are responsible for your immunity.

This stupendous squash also helps to soothe the stomach lining and microvilli that perform all your digesting work, being naturally alkalising due to high amounts of chlorophyll and water. That means say goodbye to indigestion, stomach inflammation and high acidity that just leaves you feeling blah.

Zucchini should definitely be purchased organic since its high in pesticides in its conventional form, and unfortunately it’s also one of the most common crops to be genetically modified.

If you get the chance visit your local farmers market, community agriculture program, the organic section of your supermarket or an organic delivery service to source chemical free and higher nutrient zucchinis.

I love to use a slicer or mandolin to turn zucchini into noodles (zoodles) in place of grains in lasagne and pasta dishes, or topped onto salads. You can also grill or roast it, and even freeze it into cubes and make your smoothie creamy and frosty without the need for bananas!

Happy Gut Banana and Mango Smoothie

Serves one

Ingredients

  • 1 frozen banana
  • ½ cup frozen mango chunks
  • 1 cup almond milk or milk of choice
  • 1 tsp Love Your Gut powder
  • 1/2 teaspoon vanilla powder or extract
  • Pinch cinnamon
  • Pinch nutmeg
  • 1/2 tsp turmeric

NOTE: If you don't have all the right ingredients, you can use our Golden Gut blend and just add mango and banana and milk of choice.

Method

  • Place all ingredients to a high-speed blender and whizz until combined and smooth
  • Pour into a tall glass
