Chia and Berry Overnight Breakfast Jar

But hey somehow, you've convinced yourself that that's life - you don't have time for silly things like feeding yourself or sleep anymore and that's okay! It's hard being an adult...

It’s basically pudding for breakfast.

I know what you're thinking... do go on.

This is the kind of breakfast you can make the night before and then wake up and reach for. How easy is that? It’s breakfast-in-a-jar that is not only #instagramworthy but delicious and healthy. It's almost too good to be true. 

So, what is in this creation I speak of?

Chia seeds. These little guys are small in size but HUGE in terms of their nutrients. They’re packed with omega-3’s, antioxidants, fibre, calcium and protein.  Chia seeds can even help boost the immune system and burn fat. They provide a great burst of energy that won't end in a slump because of their great protein-fat-fiber ratio. Unlike some breakfast foods, chia seeds won’t spike your blood sugar or insulin levels. 

I’ve also added cinnamon to the mix, a spice that’s known to help reduce blood sugar levels and even decrease your likelihood of developing heart disease. A combination of these two means you won’t have an energy slump like you would with coffee, and end up reaching for another coffee or chocolate bar from the vending machine.

Another reason to swap your coffee for chia seed pudding is that you'll also be upping your hydration levels! To make overnight oats, you need to combine it with a milk of your choice. This means you’re also getting the added benefit of hydration, calcium and proteins.

Okay, you get it, it’s pretty healthy but… how does it taste?

I’ve added raspberries and blueberries, two fruits that are loaded with polyphenols and antioxidants to help you burn fat and because well… they’re tasty. They’re also low in sugar and provide a burst of flavor in our pudding. Don't forget the optional nuttiness of nut butter and crunchiness of coconut flakes.

This breakfast is paleo-friendly, vegan-friendly, dairy-free and gluten-free. The only thing it's not free of is taste! It's a perfect balance of creamy, fruity and sweet.

So, it's time to throw out that coffee machine, say goodbye to morning tummy grumbles and start your day on the right food foot!

Chia and Berry Overnight Breakfast Jar

Serves: 1

Ingredients: 

  • ½ cup fresh or frozen raspberries, plus extra to serve
  • ½ cup fresh or frozen blueberries, plus extra to serve
  • Pinch vanilla powder 
  • Pinch cinnamon
  • 3 tbsp coconut flakes
  • 3 tbsp chia seeds
  • 1 cup milk of choice
  • 1 tbsp nut butter (optional)
  • 1 TBS Love Your Gut powder (optional)

Method:

Combine all ingredients apart from milk and nut butter in mason jar, gently mashing berries, then pour milk over and pop lid on. Place in fridge overnight.

In the morning, serve with spoon of nut butter and extra berries.

    Do you have an approximate calorie/kj count? I do a 500 calorie fast day once a week, and was wondering if including this Chia and Berry drink would be appropriate? Love your recipes, and use them on a fasting day and also on non-fasting days.
