Healthy Beet Recipes for Summer

Though their usage and popularity has been relatively stable over time, this year has seen purple vegetables gaining fair momentum down under and in the UK. Clean eaters who’ve long embraced rainbow plant-based diets know the benefits of beets, but it's good to finally see friends and family getting wiser with their food choices.

Roasted, chopped, baked, powdered, pickled, juiced, boiled - there are several ways to consume this incredible summer vegetable. In terms of nutritional value, beets bring a kickass combination of antioxidants, potassium, Vitamin C, folate, and iron. The approval ratings for the modest tuber have never been so high, and menus across the country now list not just soups, sandwiches, stews featuring the vegetable, but even desserts and lattes!

On top of being beneficial for skin, brain, or just basic cellular health, beets help ‘healthify’ otherwise overindulgent treats with natural sugars, all while improving the overall texture and freshness of baked goods. Plant protein snack companies have also turned to the veggie for diversifying their product lines, as it contains nitrites and amino acids essential for physical activity - no wonder the Romans considered it an aphrodisiac.

The beet effect isn’t lost on industry players either - aggregators like Deliveroo contribute to the hype, and it certainly doesn’t hurt that its taste profile is rather sweet and mild, explaining why it pairs so well with chocolate.

Here are some fantastic healthy recipes to try out, especially if you’ve still unconvinced about the versatility and power of the beet. 

My Broccoli Bhajis + Chia Jam and Carrot and Beetroot Raita

If you're not familiar with the bite-sized Bhaji, it's a well-loved street food in India that's typically spicy. It's similar to a fritter- traditionally served on top of meals as a crunchy addition, but has also become appreciated on its own as a delicious snack enjoyed at Indian festivals, as a starter before meals, and as a comfort food. Enjoy these brilliant bhaji's warm as a light meal or snack served with my chia jam and carrot and beetroot raita.

Warm Beetroot, Carrot and Pear Salad 

If you're looking for that perfect in-between season salad, this is the one. It's a nourishing salad filled with herbs that make it sweetly satisfying and equally grounding.  The addition of pear adds a delicious crispness to this salad that everyone will go crazy for! 

Rainbow Salad with Tahini and Lemon Dressing 

Let me first start off by saying that this tahini and lemon dressing is next level, better than any pre-packaged dressing you could find at the grocery store. It so perfectly complements this fresh salad, filled with every colour of the rainbow, including of course, our star, the mighty beetroot. 

Beetroot Red Velvet Cupcakes 

Who needs red food colouring when you have beetroots? These red velvet cupcakes from I Quit Sugar taste as good as they sound! Soft, cakey cupcakes that don’t taste like vegetables? Check. A guarantee that you'll be able to remember portion control? Not applicable.

Hello Perth friends.

I'll be heading back West to be a part of the Living Well in WA festival.
It's a fun festival where you can view healthy chef cooking demonstrations and sample organic food (who doesn't love sampling food?!), experience a range of natural therapy treatments, mindfulness meditations and source clean green eco-friendly solutions for the home and garden. What are Fake Naturals?

In my life, I like to embrace nature in everything whenever and wherever possible. I enjoy my food clean and from the earth and I like the people I surround myself with to be real and honest. There’s no reason why I would want the beauty products I use be to be any different.

Unfortunately, many products that label themselves as natural are not as ‘natural’, ‘eco-friendly’ and ‘organic’ as they want you to believe.

As there is no governing standard in Australia that brands have to meet to call themselves natural, brands can do two things without breaching Consumer Laws. Firstly, companies can use words such as ‘naturally inspired’ to lead consumers into thinking that their products are natural when that is not the case.

They can also use words, like ‘eco-friendly’ and ‘botanical’ so that the consumer believes they are natural, when in fact they’re not. They can also include ingredients in products that aren’t truly natural – in a ‘fake natural’ product, it’s often you might see a natural oil listed next to a mineral oil.

This lack of governing standard means there’s lots of confusion amongst those seeking out truly natural products, and an even greater need to be vigilant to know what phrases and ingredients to look out for and which ones to avoid.

It’s unclear if this level of regulation is likely to change in the future, however if people continue to voice their concerns about misleading labels then hopefully we can see some change.

Often, companies will mask unnatural products by throwing them next to a natural one in the label so it can get really confusing when searching for truly natural skincare. It’s my mission to encourage and provide you with information about how to read a label and understand what is best to avoid so that you can be on your way to becoming a naturally glowing version of yourself.

Natural, to me, means both the product’s activities and its formulations are plant-derived ingredients. I define fake naturals as products that call themselves natural but aren’t truly natural. Products that contain fake naturals can cause serious skin issues such as allergic reactions, dermatitis, skin sensitivities and blocked pores.

While these may not seem so serious to the average person, what we put into our skin is absorbed into the blood and then the rest of our body! There’s never been a more important time to take care of your skin and be aware of what you’re applying onto it.

Curtis Stone and his new Pizza Stone!

CurtisThis week I chatted to the lovely Curtis Stone who is back in Australia to launch his cooking range into Coles stores.  One of the really exciting new cookware tools he has developed is a handy pizza stone, which is the perfect platform for making healthy gluten free pizzas. 

What’s interesting about using the stone is that it prevents you from getting a doughy result underneath and because you heat it up in the oven before-hand, it crisps up the base of the pizza by holding in and then dispersing the heat, making it crunchy on the bottom and giving you a melt in the mouth softness on top. It’s affordable too and for just over $20 you can make your own healthy wood-burning-oven like pizza without breaking the bank.

-the pizza stone is pre-heated in the oven
-the dough gets a jolt of heat when it hits the stone
-the heat of the base helps the pizza cook quicker and cooks the dough through
-to get a crisp crust without a stone you need to cook the pizza longer, which usually means hard crust and overcooked toppings
-Pizza stones are also great for making homemade breads, heating up flatbreads and preparing pita!

I asked Curtis a few questions about what he’s been up to since he was last in Australia. 

How's your trip back to Oz been?

Fun so far, I’ve just spent the last couple of days acclimatizing my wife Lindsay and baby boy Hudson to the weather and the culture here.  It’s been so fantastic to be able to spend time with cousins and grandma! They’ve all been having such a great time getting to know each other.

What do you miss about being home?

I really miss my family and I also miss our Aussie sense of humour.  Sometimes in America I tell a joke and they don’t really get it or they think I’m being a bit strange, we’re used to a ribbing kind of humour in Oz and I like it so it’s great to be back and get a sense of that and have a laugh and a joke. 

What made you decide to become a chef?

From a really early age I‘ve always loved to eat and food is on my priority list. Ok so the truth is sometimes I like to eat off other peoples plates! That’s how much I love food. I feel so fortunate and lucky to have been able to follow my passion and work with food.

What’s the healthiest dish you like to cook?

Depends on the season really but at the moment we are in summer, so raw ingredients such as salad, kale, asparagus, grilled veggies, avocados with a bit of sherry vinaigrette is filling my plate right now.  The addition of avocado makes the dressing so creamy if you mush it up.  Granted it’s not the prettiest salad but it tastes amazing.

I’ve just released a kid’s recipe book and I know you have a little boy, do you make all of Hudson's food and what does he like to eat?

Lindsay and I both cook for him and he just loves seafood, he really enjoys eating proteins so when I watch him eat he likes to eat his salmon first and then he’ll eat his veggies afterwards.  It’s been a really interesting journey becoming a parent and trying to figure out his taste buds.

What's the best thing about being a dad?

Watching the development of Hudson has been incredible.  I also enjoy seeing Lindsay interact with him too.

I read that you were instrumental in getting more ethical products onto the shelves in Coles, such as sow stall free pork and no added hormone beef  tell us a little bit about that and has it been a hard process?

Yes it has been a very big food project that I’m very passionate about and have been working with Coles for a long period of time to make positive changes.  We are working on continuing to have locally sourced seasonal fruit and vegetables in store and as much Australian produce as possible. Coles currently source 96% of their fruit and vegetables from Australian farmers.   We are also trying to educate consumers to eat and shop seasonally so for example there isn’t a demand for cherries out of season whereby they would need to be purchased from overseas.  The ethical and sustainable meat products that we have introduced has involved a massive restructure of the whole industry and we are working together to bring about big scale change.  It involves talking to farmers about different ways that they can build their infrastructure and put an animal’s welfare as a priority, but as you know, major change does take time to implement. 

So tell me a bit about your new pizza stone, why did you decide to create it?

I really want to empower people to cook at home and make it easy for them to do so.  I am also working with Coles to bring a new product each month into stores, there’s going to be a wok soon and a roasting dish which is easy to use and affordable.

What's your favourite pizza recipe and do you have a healthy version?

My favourite pizza is a homemade one which would have artichokes, olives, Portobello mushrooms, I made one this morning with ingredients that were on their last legs seasonally, may as well use them up whilst they are there!

8 simple ways to improve digestion and absorption

I have a new theory.  You are NOT what you eat.  I know that sounds a bit random, but essentially, you are NOT what you eat, you are what you digest and absorb.

Have you ever eaten food which is perfectly healthy and nutrient rich only to discover the after affects of pain and bloating and wishing that particular food had never been on the guest list?

If you suffer from any kind of digestion stress and feel sleepy and sluggish after meals, you may need a digestive tune-up.

Follow these tips to get yourself on the right road to maintaining a healthy digestion. 

Use more coconut products

Coconut oil contains lauric acid - a proven antiviral, antibacterial and anti-fungal agent that is easily digested and absorbed.  The anti-fungal aspect helps kill candida in the gut, which is a common problem for people with digestive stress. Plus, coconut  helps absorb beneficial nutrients from our food.

Take probiotics

Probiotics are a live microorganism that improve the balance of flora in the digestive system. For a healthy digestion these friendly bacteria are essential. They help prevent the overgrowth of bad bacteria and are often depleted if you've been taking antibiotics or if you've had gastro. Probiotics can be found in some yogurts or taken as supplements.

Soak your nuts and grains

When you soak your nuts and grains you are reducing toxic substances and inhibitors that occur naturally within the grain.  For example, phytic acid which is found in most nuts, seeds and grains, will combine with minerals such as calcium, zinc and magnesium and prevent them from being absorbed during digestion. Soaking neutralises this natural inhibitor.

Do an elimination diet

If you find you experience adverse affects after eating a particular food, it might be worthwhile trying an elimination diet. Remove the suspected food or food group from your diet for anywhere between two weeks and a month and see if symptoms resolve.

Try bone broth

Your digestive lining is supposed to be permeable to absorb nutrients. But for some people it can become too porous and let too much "leak" through without absorbing it properly. When this happens, your body can react, attacking the foods you eat. This can create IBS and other gut problems, even some autoimmune disorders. Bone broth contains gelatin which helps reinforce the lining of the gut and soothe digestive distress.

Drink less with meals

Drinking a lot of fluid (even water) while you eat can dilute the level of hydrochloric acid (HCL) in your stomach. This acid is needed to help kill bacteria and digest your foods. It's best to minimise the fluid you drink while eat and for at least an hour after you finish your meal.

Drink warm water and lemon

Along with a delicious breakfast, it's a good idea to get into the habit of starting the day with a cup of warm water with lemon. This alkaline drink will help jump start your metabolism and get your digestion moving.

Chew your food

If you're a mum, you probably tell your kids this all the time: chew your food! Chewing is the first step in food digestion. Try not to rush through your meal, but allow yourself plenty of time to chew, chew, chew before you swallow.
